Recently, we had the pleasure of hosting a Fireside Chat with Daniel Meyer, Owner, and Simon Koch, COO, of Barons Creekside, a picturesque 17-room cabin/cottage retreat located in Fredericksburg, TX. This engaging discussion provided valuable insights into their unique journey, the challenges they face, and the solutions they've found through partnering with rezStream.

Let’s begin by introducing Daniel Meyer, Simon Koch, and Barons Creekside, providing a glimpse into their daily life and background.
A little bit about Daniel Meyer
Daniel's journey into the hospitality industry is anything but conventional.
With zero experience or plans to enter this field, Daniel's story began with the sale of his cereal company in 2001.
With newfound freedom, he embarked on a global adventure, traveling to over 100 countries with just a sleeping bag and backpack.
His travels took him to some of the most challenging places, from Southeast Asia to Australia.
After four years on the road, Daniel found himself exhausted and decided to rent an RV for a cross-country trip from California to Florida.
During this journey, he stopped in Fredericksburg, TX, and was captivated by the charm of Main Street.
Inspired by the area and the opportunity it presented, Daniel purchased the property that would become Barons Creekside, despite having no connections or knowledge of Texas culture, laws, or zoning regulations.
A little bit about Simon Koch
Simon is Daniel's nephew, and serves as the Chief Operating Officer at Barons Creekside.
Simon's journey into the hospitality industry was heavily influenced by his uncle's vision and the unique appeal of Barons Creekside.
With a background in structured, organized work environments from his previous job in Switzerland, Simon had to adapt quickly to the dynamic and often unpredictable nature of the hospitality industry.
He starts his day early, rising at 5 AM for a run on the 26-acre property.
Despite the early start, Simon takes the first hour for himself, emphasizing the importance of a personal routine before diving into the day's work.
Simon's role at Barons Creekside is akin to that of a firefighter – tackling problems as they arise and ensuring a smooth operation of the property.
He spends about half of his day on planned activities, with the remainder dedicated to addressing unexpected issues.
This hands-on approach is crucial in maintaining the high standards and personalized guest experiences that Barons Creekside is known for.
About Barons Creekside
Barons Creekside is a unique 17-room retreat nestled on 26 acres in Fredericksburg, TX. The property boasts a rich history, with Simon dismantling a farmhouse in Switzerland and relocating it to Barons Creekside, ensuring that everything remains authentic and 250 years old. Over the past 19 years, the property has flourished, becoming a haven for guests seeking tranquility and a connection with nature.
Key ingredients to their success include:
- Unique Setting: The property features lush greenery, with 200 trees planted by Simon, and two creeks, creating a serene environment where guests can relax and enjoy the wildlife.
- Personalized Service: They utilize a phone system called E-Voice, ensuring that guests can always reach someone, whether it's Daniel, his spouse, or Simon.
- Engaging Experiences: Despite offering contactless check-in, Barons Creekside maintains a personal touch by living on the property and hosting events at their bistro/wine bar, which features live music.
Challenges: We all have them.
Although there are hundreds of challenges owners and operators deal with, here are the four that stood out in our conversation with Daniel and Simon:
🕵️♂️ Guest Management.
With an increase in wealthy and international guests post-pandemic, managing guest expectations and ensuring they understand what they are booking has become more challenging, especially with third-party bookings.
🍷 Guest Behavior.
Being located in the second most visited wine country outside of Napa, they have seen an increase in guests overindulging, leading to more incidents of disrespectful behavior.
📈 Technology Adaptation.
At 67, Daniel finds it challenging to keep up with AI and changing marketing trends. This challenge was exacerbated when their office manager of six years quit without notice, leaving Simon to fill the gap.
💼 Staffing.
Like many in the industry, finding and retaining staff who share their passion for hospitality is difficult. The sudden departure of their office manager has intensified this challenge, requiring Simon to step in and assist in that role.
Solutions: What are you getting from rezStream?

- Double Booking Prevention: Recently, Barons Creekside experienced a double booking which can happen due to the myriad of booking channels and synchronization required. rezStream caught it and notified them, helping to avoid potential issues.
- Financial Metrics: For Dan and Simon, the most important financial metrics are occupancy and revenue details. They use these metrics to assess their success and make informed decisions about their business.
- Technology Advancements: They appreciate the automation and AI features of rezStream’s integrated guest messaging partner, Akia, particularly for digital registration cards and automated texts.
Looking ahead, Dan and Simon hope to continue their unique approach, with Simon expressing a desire for an integrated environment similar to Apple's. As such, they plan to fully switch to rezStream this summer for their marketing and website needs as they work through staffing challenges.
